I finally got into my Vegan Cupcakes Take Over the World cookbook by
Isa last weekend and came up with these little beauties: Golden Vanilla cupcakes. I topped them with my very own blueberry icing using frozen blueberries, veggie shortening, earth balance and icing sugar. I know. But they're cupcakes, they aren't supposed to be good for you. One day I will stop pretending my phone is a camera.
